Each season, the kitchen gives away one of its recipes. This one you can make at home — or come taste the original.

The house recipe

Crispy rösti with garden herbs

  1. Cook 800 g of firm potatoes the day before, in their skins.
  2. Grate coarsely, salt, pepper — never over-mix.
  3. Butter AND lard in the iron pan, medium heat.
  4. Twelve minutes without touching. Flip with a sure hand.
  5. Chives and fresh thyme at the end, not before.
